Pollo Asada Tacos

These chicken tacos are amazing. I use home made corn tortillas here. You can certainly use store bought. Don't feel like you need to use every ingredient here. These would taste great with guacamole vs. the avocado sauce. You can use a different salsa and you don't need the queso fresco. The tacos would taste fine, but these tacos taste great.


Pollo Asada Tacos Recipe (8 tacos)

Ingredients

1 lb. Pollo Asada
corn tortillas, home made
Arbol chile and tomatillo salsa
Jed's corn salsa
Avocado sauce
1/2 cup queso fresco (cheese)
chopped cilantro

Prepartion

Grill the pollo asada. Prep the arbol chile salsa and avocado sauce. Crumble the queso fresco into a small bowl. Chop a small handful of cilantro. Let the chicken rest for 10 minutes after grilling. Cut into bite sized pieces and combine with 1 Tbsp arbol chile salsa in a bowl. Heat the tortillas for 30 seconds per side over medium heat in a large skillet or cast iron griddle.

Taco Assembly

Add a few spoonfuls of chicken first. Add a spoonful of Jed's salsa. Cover with a small handful of queso fresco. Add some avocado sauce and a bit of arbol chile salsa. Top with a pinch of cilantro.
