Pickled Red Onions

This is a quick and simple recipe for pickled red onions. We mostly use the onions on tortas, but they're great in burritos and tacos as well. The onions will last up to a month in the fridge.

Pickled Red Onions Recipe

Ingredients

1 cup boiling water
1 cup white vinegar
1 tspn salt
1 Tbsp sugar
1 large red onion sliced
pinch red pepper flakes
2 serranos or jalapaƱos (slit down the side)

Preparation

Pour the boiling water into a quart sized mason jar. Add the sugar and salt and stir. Once the salt and sugar is dissolved in the water, add the remaining ingredients. Depending on the size of your onion, you may need to add a little more water to cover the onions. Put in the fridge for at least an hour before using.
