Carne Asada Pizza

We've been making a lot of pizza lately. I found an easy recipe for the dough online. You use a kitchen aid mixer to knead the dough. Simple ingredients and the dough is easy to shape. We've been trying a variety of toppings. Adding carne asada meat along with a chipotle flavored tomato base came out wonderful. Here's the recipe.

Carne Asada Pizza Recipe

Ingredients

Pizza dough (Use this recipe. It's perfect)
2 roma tomatoes
red pepper flakes
1 garlic clove minced
pinch oregano
tspn olive oil
1 chipotle pepper in adobo (canned) minced
2 handful of shredded mexican cheese
1 cup carne asada meat
small handful chopped cilantro for garnish
Guajillo tamarind glaze for garnish

Preparation

Preheat oven to 500ยบ with a pizza stone in the oven.
Slice tomatoes in half length-wise. Using your fingers, scoop out the seeds and loose tomato liquid and discard. Finely chop the firm tomato pieces. Heat olive oil over medium heat in a sauce pan. Add a pinch of red pepper flakes and the minces garlic and cook for 30 seconds or so. Add tomato, chipotle and oregano. Cook for 10 to 15 minutes stirring occasionally. Season with a pinch of salt and pepper.

Make the dough and stretch onto a pizza board covered with corn meal or coarse flour. The dough takes about an hour to make, so plan accordingly. Spread 2-3 tablespoons of the tomato sauce evenly on the stretched dough. Almost all the way to the edge. Sprinkle the cheese evenly around. Add carne asada evenly over dough. Once the oven is heated, slide pizza onto the stone and cook for 8 minutes. Sprinkle with cilantro and squirt some of the glaze around. Slice and serve. Awesome.
