Grilled Shrimp Tacos

Grilled shrimp marinaded in lime, garlic and tequila. Topped with corn salsa on a fresh tortilla with creamy avocado sauce and a little hot sauce. These tacos taste amazing. Wow.

Grilled Shrimp Tacos Recipe

Ingredients

1lb. raw shrimp (marinaded, see below)
corn tortillas
1Tbsn butter
avocado sauce
Jed's corn salsa

Marinade

2 cloves garlic, minced
1 tspn olive oil
1 Tbsp white tequila  (or gold, whatever)
pinch of salt and pepper
1 lime
pinch ancho chile powder (optional)

Preparation

Combine marinade ingredients and add to shrimp. Marinade for 30 minutes. Place on skewers, reserving marinade liquid and garlic. Prepare the avocado sauce and corn salsa. Grill the shrimp over high heat till done. 3-5 minutes depending on your grill.  Heat a small pan over medium-high heat. Add butter and reserved marinade ingredients. Cook for 3 minutes until thickened slightly. Chop cooked shrimp into small pieces and add to cooked marinade. Warm tortillas on the grill or on a griddle. 30 seconds to a minute per side. Don't overcook. You don't want them crispy. You want them soft and hot and pliable.





Assembly

Place a few spoonfuls of shrimp mixture on a tortilla. Spoon over some corn salsa. Add a little avocado sauce and some hot sauce. Awesome.
